Vietnamese Chicken Spring Rolls: A Fresh Family Favourite
Delicate rice paper rolls filled with tender chicken, rice vermicelli noodles, crisp vegetables, and fresh herbs. Served with a tangy hoisin dipping sauce, these spring rolls are perfect for a light and refreshing meal!

Ingredients
- 300g chicken breast
- 1 tablespoon sesame oil
- 8–10 rice paper wrappers
- 1 cup cooked rice vermicelli noodles
- 1 cup shredded lettuce
- 1 carrot, cut into thin sticks
- 1 cucumber, cut into thin sticks
- 1 cup bean sprouts
- ¼ cup fresh mint leaves
- ¼ cup fresh coriander leaves
For the Dipping Sauce
- 2 tablespoons hoisin sauce
- 1 tablespoon peanut butter
- 1 tablespoon water
Optional Additions
- A squeeze of lime juice for added zest
- Sliced avocado for a creamy touch
- A sprinkle of sesame seeds for garnish
Method
Prepare the Chicken:
- Heat sesame oil in a skillet over medium heat.
- Add the chicken breast and cook for 4–5 minutes on each side, until golden brown and fully cooked.
- Remove from the heat and let it rest for a few minutes before shredding or slicing thinly.
Prepare the Vermicelli Noodles:
- Cook the rice vermicelli noodles according to the package instructions. Drain and set aside.
Assemble the Spring Rolls:
- Fill a shallow dish with warm water. Dip one rice paper wrapper into the water for 5–10 seconds until pliable, then lay it flat on a clean surface.
- Add a small handful of vermicelli noodles, shredded lettuce, carrot, cucumber, bean sprouts, chicken, and a few mint and coriander leaves onto the bottom third of the wrapper.
- Fold the bottom of the wrapper over the filling, tuck in the sides, and roll tightly. Repeat with the remaining wrappers and filling.
Prepare the Dipping Sauce:
- Mix the hoisin sauce, peanut butter, and water in a small bowl until smooth.
Combine and Serve:
Arrange the spring rolls on a platter and serve with the dipping sauce on the side.
