Pork Dumplings
These homemade dumplings feature a savoury pork filling wrapped in a delicate dumpling wrapper and pan-fried to golden perfection. Served with a simple dipping sauce, they are a delicious addition to any meal.

Ingredients
For the Dumplings:
- 250g pork mince
- 2 spring onions, finely chopped
- 2 garlic cloves, minced
- 1 tsp fresh ginger, grated
- 1 tbsp soy sauce
- 1 tbsp oyster sauce
- 1 tsp sesame oil
- ½ tsp white pepper
- 1 tsp sugar
- 1 tsp cornflour
- 1 packet dumpling wrappers (approx. 30 pieces)
- 2 tbsp neutral oil (for frying)
- ½ cup water (for steaming)
For the Dipping Sauce:
- 3 tbsp soy sauce
- 1 tbsp rice vinegar
- ½ tsp sesame oil
- ½ tsp sugar
- ½ tsp chilli flakes (optional)
- ½ tsp sesame seeds (optional)
Method
1. Prepare the Filling:
In a mixing bowl, combine the pork mince, spring onions, garlic, ginger, soy sauce, oyster sauce, sesame oil, white pepper, sugar, and cornflour. Mix well until the ingredients are fully incorporated. Cover and let it rest in the fridge for at least 15 minutes to allow the flavours to develop.
2. Assemble the Dumplings:
Place a dumpling wrapper on a clean surface. Spoon about 1 teaspoon of the filling into the centre. Dip your finger in water and lightly moisten the edges of the wrapper. Fold the wrapper in half, pressing the edges together to seal, pleating as you go for a traditional look. Repeat with the remaining filling and wrappers.
3. Pan-Fry the Dumplings:
Heat 1 tablespoon of oil in a large non-stick frying pan over medium heat. Arrange the dumplings in a single layer, flat side down. Cook for 2-3 minutes until the bottoms turn golden brown.
4. Steam the Dumplings:
Carefully add ¼ cup of water to the pan and immediately cover with a lid. Reduce the heat to low and steam the dumplings for 5-6 minutes, or until the water evaporates and the dumplings are fully cooked. Remove the lid and let them crisp up for another minute.
5. Make the Dipping Sauce:
In a small bowl, whisk together soy sauce, rice vinegar, sesame oil, sugar, and chilli flakes (if using). Sprinkle with sesame seeds for extra flavour.
6. Serve and Enjoy:
Transfer the dumplings to a serving plate and garnish with chopped spring onions or sesame seeds. Serve with the dipping sauce on the side.
Tips:
- Make-Ahead: You can freeze assembled dumplings on a tray, then transfer them to a container for longer storage. Cook from frozen—just add an extra 2-3 minutes to the steaming time.
- Variation: Swap pork for chicken, prawns, or a mix of mushrooms and tofu for a vegetarian version.
- Extra Crunch: Sprinkle toasted sesame seeds or chilli oil on top for added texture and heat.
