What Ingredients do I need for Lamb Noisettes?

  • Lamb leg knuckle: 350 grams
  • Spinach leaves: 5 grams
  • Streaky bacon: 1 slice
  • Grated cheese (cheddar/tasty): 20 grams
  • Meat juice

 

How do I prepare Lamb Noisettes?

  1. Butterfly the lamb twice so that it is just under a cm thick.
  2. Layer the spinach on the flat lamb. Cut the streaky bacon into thirds.
  3. Then layer the bacon followed by a good sprinkle of cheese.
  4. Roll it up and tie with two strings or truss loops and cut in half.
  5. Finish with a drizzle of meat juice.

 

How do I cook Lamb Noisettes?

  1. Preheat oven or air fryer to 180c.
  2. Remove meat juice from the lamb.
  3. Season with salt and pepper then grill the rolled noisette in a hot fry pan until it is golden brown on all sides.
  4. Place the lamb in a preheated oven or air fryer and cook for approximately 8 minutes or until cooked to your preferred doneness.
  5. Loosely wrap in foil to rest for 5 minutes before carving into half to serve.

 

What are some vegetables I could pair with Lamb Noisettes?

Here are some delicious vegetable options to pair with Chicken Breast Mignon:

  1. Broccoli: Steamed or roasted broccoli florets seasoned with garlic and olive oil for a simple yet tasty accompaniment.

  2. Mushrooms: Sautéed mushrooms, such as cremini or shiitake, with garlic and thyme add a rich, umami flavour that pairs well with lamb.
