- Butterfly the lamb twice so that it is just under a cm thick.
- Layer the spinach on the flat lamb. Cut the streaky bacon into thirds.
- Then layer the bacon followed by a good sprinkle of cheese.
- Roll it up and tie with two strings or truss loops and cut in half.
- Finish with a drizzle of meat juice.
How do I cook Lamb Noisettes?
- Preheat oven or air fryer to 180c.
- Remove meat juice from the lamb.
- Season with salt and pepper then grill the rolled noisette in a hot fry pan until it is golden brown on all sides.
