Homemade Lemon and Herb Whole Chicken

This Homemade Lemon and Herb Whole Chicken recipe combines juicy, golden roast chicken with the bright flavours of lemon and fresh herbs. A stunning main dish, it's perfect for both everyday dinners and special occasions.

Cooking time: 1 hour 30 minutes

 

Ingredients:

  • 1 whole chicken (approx. 1.8-2kg)

  • 2 lemons (1 for zesting and juicing, 1 halved)

  • 100g butter, softened

  • 2 tsp sea salt

  • 1 tsp freshly cracked black pepper

  • 1 tsp smoked paprika (optional)

  • 3 cloves garlic, minced

  • 1 tbsp fresh rosemary, finely chopped

  • 1 tbsp fresh thyme leaves

  • 1 tbsp parsley, chopped (plus extra for garnish)

  • 1 onion, quartered

  • 3 tbsp olive oil

 

Method:

  1. Preheat the oven: Heat the oven to 190°C (fan-forced).
  2. Prepare the herb butter: Mix softened butter with minced garlic, lemon zest, rosemary, thyme, parsley, salt, and pepper in a bowl.
  3. Season the chicken: Carefully loosen the skin over the chicken breast with your fingers. Spread the herb butter under the skin, ensuring even coverage, and rub the remaining butter over the exterior.
  4. Stuff the cavity: Place the halved lemon and onion quarters inside the cavity for extra flavour and moisture.
  5. Prepare for roasting: Place the chicken breast-side up in a roasting pan. Drizzle with olive oil and sprinkle with smoked paprika for added colour.
  6. Roast the chicken: Cook for 1 hour 30 minutes, basting every 20-30 minutes with the pan juices to keep the chicken moist.
  7. Check for doneness: Use a meat thermometer to check the thickest part of the thigh. The chicken is ready when it reads 75°C and the juices run clear.
  8. Rest the chicken: Let the chicken rest for 10-15 minutes before carving to lock in the juices.

 

Serving Suggestions

Carve the chicken and arrange it on a serving platter. Garnish with parsley and a squeeze of lemon juice for added brightness. Pair the chicken with these delicious sides:

  • Roasted garlic potatoes: Crispy and golden, perfect for soaking up the pan juices.
  • Honey-glazed carrots: Sweet and tender, drizzled with honey and sprinkled with fresh thyme.
