Creamy Chicken Pesto Pasta

A rich and satisfying pasta dish featuring tender chicken breast, creamy pesto sauce, and perfectly cooked fettuccine. Topped with fresh herbs and parmesan, it’s the kind of comfort food that comes together in under 30 minutes — perfect for weeknights or casual entertaining. You can also swap in penne pasta if preferred.

Ingredients

For the Pasta:

  • 400g fettuccine (or penne)

  • 2 tablespoons olive oil

  • 500g boneless, skinless chicken breast, diced

  • Salt and freshly ground black pepper

  • 2 cloves garlic, minced

  • 200ml cream

  • 4 tablespoons basil pesto (store-bought or homemade)

  • ½ cup grated parmesan cheese, plus extra to serve

  • ¼ cup sun-dried tomatoes, chopped (optional)

  • 1 cup baby spinach or chopped kale

  • Fresh parsley or basil, to garnish

 

Method

1. Cook the Pasta:
Bring a large pot of salted water to the boil.
Add the fettuccine and cook according to packet instructions until al dente.
Drain, reserving ½ cup of the pasta water, and set aside.

2. Cook the Chicken:
Heat olive oil in a large frying pan over medium heat.
Season the chicken with salt and pepper, then sauté for 6–8 minutes, or until golden and cooked through.
Add the garlic and cook for 1 minute until fragrant.

3. Make the Sauce:
Reduce heat to low. Add cream and pesto to the pan with the chicken. Stir to combine.
Add parmesan and stir until melted into a smooth, creamy sauce.
Stir through the sun-dried tomatoes and spinach, cooking until the greens have wilted.

4. Combine with Pasta:
Add the cooked pasta to the sauce and toss gently to coat.
Use a splash of the reserved pasta water to loosen the sauce if needed.

 

To Serve:

Plate the pasta in bowls or on a large serving platter.
Top with freshly chopped parsley or basil and a generous sprinkle of parmesan.

 

Tips:

  • Fettuccine is great for creamy sauces, but penne works just as well if that’s what you have on hand.

  • Add a squeeze of lemon juice before serving for a fresh, zesty finish.

  • Pair with crusty bread or a fresh green salad for a complete meal.
