Classic Chicken Fajita Tacos

These Classic Chicken Fajita Tacos are a vibrant combination of juicy chicken, tender capsicums, and fresh toppings. Simple yet flavourful, they're perfect for a quick and satisfying meal.

Ingredients:

  • 500g chicken breast (you can remove the skin before or after cooking if preferred)

  • 1 red capsicum, thinly sliced

  • 1 green capsicum, thinly sliced

  • 1 yellow capsicum, thinly sliced

  • 1 large onion, thinly sliced

  • 2 tbsp olive oil

  • 1 tbsp smoked paprika

  • 1 tsp ground cumin

  • 1 tsp ground coriander

  • 1/2 tsp chilli powder (optional)

  • Salt and pepper, to taste

  • 8-10 small flour or corn tortillas

  • Fresh coriander leaves, chopped, for garnish

  • 1 lime, cut into wedges

Toppings:

  • 1 avocado, diced

  • 1 tomato, diced

  • 1/4 cup red onion, finely diced

  • Fresh coriander, chopped

  • 1/4 cup sour cream or Greek yoghurt (optional)

  • Fresh salsa or hot sauce (optional)

Method:

  1. Prepare the Chicken You can either cook the chicken with the skin on to add extra flavour, then remove it before slicing, or remove the skin before marinating. Slice the chicken thinly.
  2. Marinate the Chicken In a large bowl, mix the smoked paprika, cumin, coriander, chilli powder (if using), salt, and pepper. Add 1 tablespoon of olive oil and the sliced chicken, tossing to coat. Allow to marinate for 10-15 minutes.
  3. Cook the Vegetables Heat 1 tablespoon of olive oil in a large pan over medium-high heat. Add the sliced onions and capsicums and cook until softened and slightly charred, about 5-7 minutes. Remove from the pan and set aside.
  4. Cook the Chicken In the same pan, add the marinated chicken slices (if using skin-on chicken, start with the skin side down for crispiness). Cook for about 6-8 minutes, stirring occasionally, until the chicken is fully cooked and golden-brown. If using skin-on chicken, remove the skin before assembling the tacos.
  5. Combine Everything Add the cooked capsicums and onions back to the pan, stirring them together with the chicken for a couple of minutes to blend the flavours.
  6. Assemble the Tacos Warm the tortillas in a dry pan or over an open flame for a few seconds on each side until soft. Divide the chicken and vegetable mixture evenly across the tortillas.
  7. Add Toppings Top each taco with diced avocado, tomato, and red onion. Garnish with fresh coriander, squeeze over some lime juice, and add sour cream, salsa, or hot sauce if desired.
