Asian Beef Salad
This vibrant and flavour-packed dish features tender beef steak served atop a crisp salad with capsicum, red onion, and roasted cashews. Tossed in a zesty Asian-style dressing, this salad is perfect for a light yet satisfying meal.

Ingredients
For the Beef:
- 400g rump steak
- Juice and zest of 1 lime
- 2 tbsp soy sauce
- 2 tbsp sesame oil
- 2 garlic cloves, minced
- 1 tsp freshly cracked black pepper
- 1 tsp ground ginger
For the Salad:
- 2 cups shredded lettuce
- 1 red capsicum, thinly sliced
- 1/2 red onion, thinly sliced
- 1 medium carrot, grated
- 1/4 cup spring onions, sliced
- 1/2 cup cherry tomatoes, halved
- 1/4 cup roasted cashews
- 2 tbsp fresh coriander, chopped
For the Dressing:
- 2 tbsp soy sauce
- 1 tbsp fish sauce
- Juice of 1 lime
- 1 tsp honey
- 1 tsp sesame oil
- 1/2 tsp red chilli flakes (optional)
To Serve:
- Lime wedges
- Extra roasted cashews for garnish

Marinate the Beef:
- In a bowl, mix lime juice, lime zest, soy sauce, sesame oil, garlic, pepper, and ground ginger.
- Add the rump steak, ensuring it’s evenly coated. Cover and refrigerate for at least 30 minutes, or up to 4 hours.

Prepare the Salad:
- In a large bowl, combine shredded lettuce, capsicum, red onion, carrot, spring onions, cherry tomatoes, and coriander. Toss gently to mix.

Make the Dressing:
- In a small bowl, whisk together soy sauce, fish sauce, lime juice, honey, sesame oil, and chilli flakes. Set aside.

Cook the Beef:
- Heat a grill pan or barbecue over medium-high heat.
- Remove the steak from the marinade and grill for 3-4 minutes per side, or until cooked to your liking. Rest for 5 minutes before slicing thinly against the grain.

Assemble and Serve:
- Place the salad onto serving plates and top with sliced beef.
- Drizzle the dressing over the top and sprinkle with roasted cashews. Garnish with lime wedges and additional cashews if desired.
